Last Christmas... no, the one before that, I ordered a bunch of those damn Portuguese flat-sided hot dog rolls and some Kayem hot dogs. We used the extra rolls to make lobster rolls for New Year's and thrilled the crap out of my brother-in-law's stepfather, who surprised me by being a Mainer. (No idea how he ended up in Colorado married to a loud Italian broad, but he's an okay guy.)

Lobster roll is so easy to make, which makes it easy to fuck up. You gotta look really hard at what's being served to make sure they don't fuck up the salad with crap like capers and whatnot.

Capers have their place (puttanesca for one), but it sure as shit ain't in lobster rolls.

Lobster, celery, mayo, salt, pepper, maybe a shake of celery seed. Toasted buttered hot dog buns. That's it. Yet you find people throwing in crap like pimentos and shit :P
